I was wondering, do cavities grow by the second if left untreated?

Yes: Cavities don't stop progressing... The decay is continuous. That does not mean that in a day's time your teeth will rot and fall out. But decay left untreated will progress until the tooth becomes unrestorable. Extraction will be the result.
