Good oils: Virgin coconut oil is a saturated fat in the form of medium chain triglycerides, which is a great source of fuel for the body. It is processed differently from other saturated fats. Palm oil is actually not bad for you, as long as it is non- hydrogenated. Red palm oil, in particular, is high in beta carotene and has a high smoke point. Coconut and red palm oil can be used for high heat cooking.
