i daily eat 5 -7 table spoons of extra version olive oil mostly sprinkling on food, salad. any health  benefits,  or concerns from the saturated fat.

Only calories!: There is little saturated fat in olive oil, which primarily is monosaturated fat, the fat with health benefits, and which also moderates your cholesterol and increases hdl.  The only downside is the extra calories.  If you are on a low carbohydrate lifestyle, it wouldn't matter.  But on a conventional diet it would.  It is a good idea to replace saturated fat with monsaturated fat when you can!

frustrated.  ate a high fat, high protein meal (bacon, eggs, salad w/olive oil) yet my blood sugar peaked at 122.  what can i do?  smaller meals?

122 is fine: It is entirely normal for blood sugar to rise to 122 or more after a meal; the "normal" level is up to 140. 
it you ate less the sugar wold probably not rise as much, but this is not necessary as your level is not of concern.

i add oil on vegetables to make my salad. which one is better for health, olive oil or sunflower oil?

Avoid Canola Oil: The way it is processed and can be genetically engineered.  It's from the rapeseed, a variant of mustard.  Olive oil is much better than sunflower oil.  In general, avoid vegetable oils and run from corn oil, another gmo.  Yes, you can fry w/olive oil.  Peace and good health.

i eat salad with white or dark balsamic vinegar and olive oil almost every day.  is this too much vinegar?

No: not really.  It can cause stomach upset in some peopke, there can also be some dental erosion.  There may be some interactions with some medications but you have to be consuming significant amounts of vinegar. I say enjoy it.

No. Less calories in: There are no fat burners, although there are gimmicks ; diets that promise you their products can do this. The only way to effectively spot-reduce unwanted tissue is to surgically remove it. The "pear" body type preferentially stores fat around the hips; "apples" store it around their waist. Lose 1 pound of fat for every 3500 calories you drop or exercise off, but you can't pick where--sorry.

is it ok for someone with acid reflux to take  1 spoon of extra virgin olive oil on daily basis? i have concern since fat should be avoided by acid reflux sufferers.

Basics: Any fat in foods can delay stomach emptying some. For those with real reflux problems constantly this may be something to avoid.However, for many it would not aggravate their symptoms. The physical process of sitting/standing upright for hours after feeds decreases reflux enough that common food additives can be enjoyed.

10 grms is ok: No about 10 gms of saturated fat is ok per day and about 30 gms of polyunsaturated fat per day.

Moderation: In moderation. The american heart  association recommends that less than 25 to 35% of your daily calories come from fat. Saturated fats should be.
