You will be sick!: If swallowing nailpolish remover (usually acetone) you would be very sick.  Acetone is a volatile hydrocarbon and it would poison your lungs and central nervous system, for starters.  CNS effects include somnolence, headache, uncoordination, dizziness, blurred vision, weakness, fatigue, lethargy, stupor, seizures, and coma.  Get medical attention now if you have done this.

Flush eye: Nail removers are combinations of ethyl acetate and acetone.  These are irritating, stinging but do not penetrate as most come out with the first blink.  Flush out your eye; it will be red and irritated for 1/2 to 1 day but will do fine after that.

This is most likely: a (chemical)  (irritative") CONJUNCTIVITIS.... Use some "cal ming " eye drops eg: VISINE  for "red eye/itchiness" 
and if no improvement in 48 hours see an Opthalmologist  (Eye Doctor) for exam and treatment with more powerful anti-inflammatory medication.

Don't: Most nail varnish contains many things dissolved in a solvent of butyl acetate or ethyl acetate. These are volatile chemicals but are largely safe. http://ijt.sagepub.com/content/8/4/681.abstract is a link to an article looking at just this issue. However, if you sniffed enough of either chemical it could probably cause "buzz-like" symptoms.

Remove acetone from : skin by washing it  with soap &amp; water for 15 continuous minutes. Open a window &amp; turn on an exhaust fan to  avoid  inhaling fumes. Acetone is absorbed through skin; it may irritate his already macerated thumb.  It takes a large amount to cause headaches, nausea, confusion &amp; dizziness. Don't worry about thumb sucking till he turns 5, but have  his pediatrician &amp; pediatric dentist check him out now.

Wash,wash,wash out: You administered proper treatment with copious amounts of eye washing. Slight redness, gradually improving doesn't indicate severe eye injury, but if you have continuing concerns, an examination by an ophthalmologist would be most reassuring.

Depends: It really depends on where on the eye the nail hit and at what force.  You could have a mild abrasion, to a subconjunctival hemorrhage (essentially a bruise on the eyeball), to more severe conditions such as glaucoma (high eye pressures), cataracts (cloudy lens), and retinal detachment with permanent loss of vision.  See an eye md for an evaluation.

It is an art: Many women with long fingernails handle contact lenses easily.  Your best bet is to find a friend who wears contacts and has long fingernails who can show you how it is done
