Weight and genes: Fasting triglyceride levels are predominantly determined by liver synthesis and how fast they are cleared from the blood. They are less affected by the amount of fat that is eaten. Liver triglyceride production increases with the usual western carbohydrate-rich diet. But the most important factors are genes and presence of obesity. If obese, weight loss can have dramatic tg lowering effects.

what can i eat with potatoes to offset the high glycemic value? they have a high glycemic load, so that they absorb quickly into the bloodstream and raise my sugar, do i have that right?

The sweet potato is a complex carbohydrate, meaning this is better for overall diet and correct calories. The regular baked potato is just simple carbs. It is just simply sugar when it is digested.
