Some people feel better cutting out foods containing gluten- grains, because they cut down on poorly digested carbohydrates, not because of lass gluten. True gluten disease needs a gluten free diet - for life. 18 months of a gluten filled diet won't cause irreversible damage.

No: Gluten intolerance occurs when you eat wheat, barley or rye. If you avoid these foods then you will not have the symptoms of intolerance. You need to eliminate more than just bread in your diet if you truly have gluten intolerance. Read the labels to avoid wheat, barley and rye.

Hashimoto's thyroid: Autoimmune thyroiditis (hashimoto's) has been linked to higher incidence of celiac disease and vice-versa based on a common genetic trait (the presence of hla-dq2 (and/or -dq8). 
It is the abnormal reaction of the immune system that attacks both the thyroid tissue and the intestinal mucosa that is the problem. The thyroid condition itself does not cause food allergies.

Good question: Food allergies are becoming more prevalent in developed countries. Certainly increased awareness is part of the reason. Other theories include the "hygiene" hypothesis that our "clean" lifestyle has caused a switch in our immune system to overreact to normally harmless substances, i.e. Foods. There is still a lot to be learned.
