A lot: You are adding carbohydrates in the flour, and fat with the oil. The only way to to answer would be to weigh the flour and oil added to the chicken. Oil is 9 calories per gram, and flour would be 4 calories per gram.

Healthy diet: A healthy diet should have some of all the food groups- protein, fat, carbs, etc. The main concern with your diet is that it seems very low in fiber (other than some nuts and flax seed). Do you have any problems with constipation? Adding more fruits and vegetables and high-fiber carbs may help. Are you taking a multi-vitamin? You are probably not getting all your nutrients.

: No. Your diet covers all of the vitamins and essential trace nutrients.
You will need to exercise to gain muscle, diet alone will not do it. A combination of aerobic exercise and resistance exercising/weight training will be needed to improve your muscle mass. The amount of gain will also be determined by your genetic make-up.
