Tooth extraction: You can stop biting on the gauze once the bleeding stops. Do not have anything hot...Coffee, tea, soup, hot food...For 24 hours, but make sure you eat and drink. If it starts bleeding and you have no gauze, bite on a damp tea bag. If you have concerns, call your dentist or surgeon.

Until bleeding stops: Usually for a few hours after the extraction depending on how fast your blood well coagulate to make a blood clot to close the socket where your tooth was. So change the gauze every hour or when it gets socked . You can eat any thing not so hot or spicy, not to irritate the blood clot or dislodge it from the socket, also avoid drinking through a straw and of course no smoking.

Post op instructions: Your dentist should have given you specific instructions for your particular procedure, but as a general rule of thumb, after the bleeding stops you can stop biting on the gauze (15 min to 1/2 hour). Reapply for 15 min if bleeding begins again. Give it a few hours before you eat, and call your dentist for further instructions.
