Diabetes Food choice: All type of foods increase after eating blood sugars. Simple carbohydrates like sugar and starches cause a rapid rise and fall. A mix of complex carbohydrate like whole grain bread, lower fat cheese and fats from grilling with low transfat oil provides a smoother rise and fall of blood sugar than would eating a high simple carbohydrate snack like processed cereal, chips, or crackers.
