Is it normal for your billirubin to spike after gallbladder removed?

No: A small elevation in liver functions on a blood test can occur initially after surgery & resolve over a few days. A large "spike" in bilirubin would not be expected and would likely need further evaluation with testing such as ultrasound or hida scan or repeat blood testing. Be sure to ask your surgeon.
