Insoluble molecules: Fats (cholesterol is a fat) are insoluble in blood. Think of trying to stir and mix oil and water. But since we need to transport fats in our blood, our bodies "hide" the fats (lipids) inside water soluble proteins. These transport molecules are called "lipoproteins".
