They might mean: If you don't eat throughout they day, you are more likely to make up for it by having an overly large meal at night. The total amount of weight that you gain in the course of the day is directly proportional to the area under the curve representing the amount of Insulin that your pancreas has secreted. With one large meal it secretes a lot of Insulin thus causing your body to retain calories. Those calories spread throughout the day would lead to less weight gain because smaller Insulin peaks occur.
