With your symptoms: And an a1c below normal, i would be worried about possible hypoglycemia, although you haven't listed any medication that can cause blood sugar to drop below normal. If you're on corticosteroids, your blood sugar may fluctuate more than normal, giving you the sensation of fatigue. Monitor frequently, particularly when you have symptoms, and check w/your doctor.

Normal response: Feeling tired after eating is a normal response. That is why some societies take a "siesta" after lunch. With a hemoglobin a1c of 5.3%, it is unlikely that your sugars are rising significantly after eating, but you could always check that. If you are on diabetic medication (other than metformin) that can cause hypoglycemia, your medication needs to be decreased as hba1c under 6% is too low.
