Unlikely: Carrots may supplement your vitamin a levels but vitamin a deficiency in the first world is extremely rare. If your vision is disturbed, then you should see an ophthalmologist to have it diagnosed and treated rather than simply overdosing yourself with carrots in the faint hope of improvement by that means.
