Can it be that a low impact rear end accident knock my spine out of alignment?

Very unlikely but : Imaging studies may reveal findings of a straightening or loss of normal lordosis or a " curve reversal" on a lateral neck or cervical radiograph which would represent muscle reaction or possible spasm.
