Once you develop geographic tongue, is it permanent for life? or can it go away for periods at a time?

Permanently variable: It's usually permanent, but varies over time as to location, size and pattern.

Typically: People that have it see it re-occur. Intervals of reoccurrence are sporadic. Things to avoid are hot spicy foods, acidic foods and liquids, salty snacks, certain toothpastes. Is usually painless and no finite pattern. If symptomatic consult your dentist or physician. Hope this helps.
