Open windows: Now that the weather is nice, open windows to air out the house more quickly and reduce paint fumes. A fan may help too.

Yes: The odor from latex paint is not toxic to infants but can be irritating enough to cause sneezing or congestion. Airing out things when possible will help with the irritant effect. Oil based paints, that are rarely used indoors in the us at present, do have some fume issues and i would have the house aired out until no odor remains before exposure.
