If she is diagnosed with celiac disease, she will have to start a gluten-free diet. Whether she should do that ahead of time would really depend on her symptoms and what further testing she needs to make this diagnosis. Some of the testing would give a false negative if she is no longer ingesting gluten so you should check with GI before changing her diet. Good luck!

As a gastroenterologist, I would not recommend stopping glutens in this scenario, until after the G.I. doctor has had a chance to evaluate the small intestine. If you completely stop glutens, you might not be able to tell how severely affected the small intestine is. Good luck.
