Certain shoulder position during sleep can cause the nerve compression during the sleep even you do not sleep on that side. Take care.

Although during sleep you could be compressing nerves at shoulder or elbow, a very common cause of bilateral hand numbness would be carpal tunnel syndrome. Bilateral arm and leg numbness together might be associated with neck issues, such as cervical stenosis. Best to be proactive and notify your doctor.
