It’s mostly the latter. The body always breaks down each type of food the same way, but there are storage mechanisms for various types of nutrients. For example, if you eat too many calories, the body stores the excess carbohydrates as glycogen in the liver or as fat in the adipose tissue. Conversely, if you eat too few calories, your body can begin to break those same tissues down.
