Gas production in the bowel is by bacteria acting on fermentable part of your food. You assumed it is only gluten free diet that would help you however you need to review your diet more for other fermentable substrates that may be gas forming; to eat more fermented food to avoid the symptoms you have. Increased fiber with liquid/water and healthy oil should improve your bowel health.

It is not unusual to have abdominal cramping and gas in IBS. Sometimes we find a cause, such as sensitivity to particular foods, but often we do not. Sometimes a gluten-free diet helps, but often it fails to help. If that particular diet does not help, a diet low in FODMAP’s (easily google-able) can help. If your current diet fails, see your G.I. doctor about this. Good luck
