After wisdom tooth extraction pain is often the reason why you can't open your jaw completely, not the stiffness. You possibly have the stiffness from your temporomandibular joint (TMJ) rather than from the regional anesthesia. If you do not have pain, keep moving your jaw frequently for overcoming the stiff joint.

You had to open wide, and strained your muscles in that area. This is called trismus and is normal for this type of procedure. Place warm-hot compresses over area, you will be able to open in another few days. Make sure you keep area clean.
