I was diagnosed with arthritis in my knees by xray (one on each knee.) my doctor said the next step would be an mri. what could an mri show that an xray didnt?

MRI will provide details regarding non bone structures, such as ligaments, tendons, meniscal structures and ultimately muscle. Such changes are not apparent in X-rays.
