Yes, you can. Guillain Barre syndrome is most often caused by a viral illness and Covid-19 infection is a viral illness so definitely you should have the vaccine. Furthermore, Covid-19 vaccines use mRNA method, not using a low attenuated virus to prevent the infection.

I agree that the covid vaccine is still recommended for you, but I wouldn't take the Johnson&Johnson vaccine. You must discuss the options with your personal physician first,however.
