Some UTI bacteria are resistant to cephalexin and related drugs. If the cause of your UTI is susceptible to it, this dose is fine for a lower tract UTI, i.e. isolated to the bladder. A higher dose would be required for upper urinary tract infection (pyelonephritis). Discuss with your doctor if any uncertainty remains. (Is "60 pound" a typo? Maybe 160 lb?)
