It is a ingrained protective mechanism to grit the teeth in stressful situations. This helps protect the teeth and joint from trauma- but not as well as a dental guard or avoidance of the situation.

Ancient defense mechanism. If teeth are apart, and you receive an upward blow from below, the result is concussion. If teeth are together, no concussion. It's Darwinian.
