It is entirely normal for couples to kiss and have sex even if one has genital or oral herpes; your roommate and her bf are behaving normally. Second, even if she catches herpes, it's only her business, not yours: the virus is not transmitted via non-intimate contact, shared toilets, or even shared clothing etc. If you happen to have oral herpes, it's not because you caught it from her.
