Look elsewhere first: Zinc deficiency might do this but is not common. Many other conditions (anemia, diabetes, thyroid disease, depression, etc) are much more likely to be the cause of her fatigue. She should go to her family physician for exam and some simple tests.

Yes, "possible": With the limited information, it is hard to answer but since you asked if her lacking zinc was "possible" it is possible, yes. I am not sure who "they" are but it is easy to have the zinc level checked. Ask for a blood panel and consult with your doctor on this topic, and see if you can get a referral to a nutritionist. It is also wise to have sleep study done to rule out sleep apnea or UARS.
