Vaccine: After the vaccine you will develop antibodies and hence immunity (after the two doses). Now if the Virus undergoes a significant mutation that alters the spike or any other proteins then a new vaccine will have to be created. Like Influenza - you need the early flu shots. Right now it appears that the vaccine will be effective against the variants.

COVID 19: There have been cases reported where someone had recovered from one COVID 19 strain infection but subsequently became infected with another strain. We are stil finding out about immunity after being infected with COVID 19 and it appears to be quite variable in different people.
