What happens if you keep working out your sore legs everyday ???

You stay sore: Pain & soreness in muscle groups is related to the microscopic tearing of muscle fibers by the workout process. Pain is a signal of overuse. You can certainly continue to workout but if you do not give the muscle groups time to repair/build you may be loosing ground with that effort. It is reasonable to work separate muscle groups on alternate days to allow recovery.
