I read somewhere that regardless of what they eat normal people peak at 1 hour 120 mg/dl and at 2 hours are below 100 mg/dl after they eat.how true is that? wouldnt everyone fall into the dibetic radar if reading are that tough?

Not necessarily: Good day, A normal glucose/ fasting blood sugar is <100 mg/dL and 2 hours after a meal or oral glucose tolerance test normal is <140 mg/dL. See below site for more details on diagnostic criteria: https://www.diabetes.org/a1c/diagnosis Be well Dr. Wood
