How can those of us with underlying health conditions protect ourselves when our kids are in school? everyone at some point is going to get the virus this year or next year? do we build immunity?

Consistent protectio: if your children go back to school, they might be exposed to the coronavirus, or any other viruses that typically make their rounds in schools and society. Your best protection is to be vigilant in santizing your home, reinforce handwashing for your children, work hard to get yourself as healthy as possible (lose weight, exercise, sleep, hydration) and Home Quarantine anyone who shows symptoms.
