No : A single CT scan would not be enough to cause cancer through radiation and enough radiation can produce cancer changes regardless of diet.

No cancer: 1 head and 1 abdominal CT are not going to cause cancer - the radiation doses are not high enough to cause cell mutation and thus no cancer. You would need much more radiation either over long time period or if a one time exposure, need extremely high dosage of radiation such as seen after an atomic bomb. And no, at this point, diet has not been proven to change risk of cancer
