Pharmacist: Ask your pharmacist this question. Since only a small percentage of the iron is absorbed, I don't think that 3 a day would be a problem especially if you're significantly iron deficient. I have prescribed iron supplements 3 times a day on many occasions in iron deficiency patients. Be sure to take these with food.
