It's not the soda.: Charlie horses are common and painful! But they are not dangerous. It never hurts to drink less soda and more water. There is not a lot of good research out there about what really causes these random tight calf muscle spasms. In my experience one of the most helpful treatments is regular stretching of the calf muscles throughout the day, and especially at bedtime!

Muscle cramping: I agree with Dr. G about the value of stretching your leg muscles at bedtime to prevent these painful muscle spasms. Calcium, magnesium and potassium deficiencies may predispose you to them. Get checked or take magnesium supplements recommended by your pharmacist.
