I took plan b on sunday within 10 hours. i had a paragard iud inserted on tuesday and today (thurs) i had a rocephin injection & was prescribed doxycycline. will my emergency contraception/plan b be affected?

Most likely: You have had an eventful few days. You should be protected, but for peace of mind, you may wish to use a second method for a week or two (condoms for example).
