Eval of exhaustion: Your fasting glucose probably won't help explain what is happening after eating, when you are clearly not in fasting mode. It could be helpful to test your blood glucose right after eating, if that is possible. Exhaustion can be caused by things other than changes in glucose. I would ask your physician to evaluate more thoroughly. Simple sugars and high-fat foods can also play a role.
