Oophorectomy: If they left your uterus, you didn't have a hysterectomy. It sounds like you had a bilateral oophorectomy. Are you sure you don't mean they left your cervix? That would be a supracervical hysterectomy. Anyway, it may be the weight gain is from being menopausal, but have your provider check for thyroid issues and diabetes too.
