husband had bacteremia sepsis,took 7 out of recommended 14 day iv antibiotic. whats the chance of infection coming back since he stopped a week early.

A slippery slope: When you stop antibiotics for sepsis before the recommended ending date unless his physician made the decision to stop based on clinical and lab parameters not mentioned in your question. If the decision to stop was against medical advice then there is a significant risk involved. There is no way to assign a numerical value to the risk but it is certainly one I would not take.
