Good Advice: Your dentist gave you good advice. You assume that there is no post-operative sensitivity after dental restoration placement, but that's not true. Cervical restorations are a bit closer to the nerve of the tooth which may be the issue. The filling may also be deep. Your dentist knows this tooth better than anyone on this forum.
