Is hard cooking in olive oil (like frying) ok or will it kill most of nutritional benefits of olive oil?

Olive oil: I heard from a biochemistry proff one time that heating olive oil will make those benefits diminish for a number of reasons... consider cooking in alternative way (baking for example) then add olive oil afterwards!
