Husband is type 1 diabetic. he stores his opened insulin in the refrigerator. can the insulin get into foods stored near it?

No: Insulin is in its own sealed, sterile containers. It does not get into the food. Even if some insulin got into the food, the person eating the food would just digest it, so it would not cause any medicinal effects.
