Brush it: If you have a fungal infection from Candida Albicans on your tongue, the surface may have a white coating. Vigorous brushing with a toothbrush you designate for only this purpose will clear it up over time (can take a week). If it's not going away - anti-fungal rinses or Diflucan (fluconazole) medication can finish it off. Geographic tongue will have splotchy patches that move around and cannot be removed.

Rhomboid/Candida : Geographic tongue has red patches bordered by grayish white or whitish/yellow discoloration. They may disappear, reappear and change in shape or size. While it is not common to cause pain, it may cause a burning sensation with certain foods such as tomato, cheese and citrus. Rhomboid/candida usually appears in the center of the tongue as red and white (oral candida varies significantly by types).
