Of course: It looks like things are under control. The idea that vitamin c makes iron absorption more efficient is probably mostly not true, and so is the idea that there are health benefits from taking vitamin c. Do keep the iron levels on the radar in case you need phlebotomy & don't stop eating things you like just because they have iron.

Confusing.: ferritin best shows your iron level, not serum iron. Yours is abnormally high, over 300 for males. You report h63d, a mutation with no effect if you have one normal gene, and a majority of homozygotes never develop symptoms. How was Alpha-1 Antitrypsin measured? Deficiency may cause liver damage, high ferritin, and increased risk of cancers. Are PFTs normal? Suggest GI consult.
