Depends on these: These tests depend on the normal ranges of your laboratory. To treat Gluten sensitivty you would avoid all gluten. there are many gluten free products you can use to avoid wheat. It sounds like your physician feels it is better for you not to take in any wheat products. Look for Gluten Free substitutes.

Hard to say: Individual labs set up their own range of normal/abnormal values on such tests. It is not like a pregnancy test where a positive is definite. If you have TTG-IGA & anti gliadin IGA in the abnormal range of your lab, you can expect continued exposure to gluten to do damage to your system .It can take 6m to 1 yr gluten free before you notice any benefits, but continued use is not realistic.
