Celiac disease involves the production of antibodies to gluten that also attack body tissues, often the gut. Allergy involves the triggering of histamines that often cause rashes or other symptoms. A person can have both an allergy to wheat & antibody triggering from gluten intake. You define celiac by having the antibody tests & if positive, an intestinal biopsy.
