The antibodies produced in response to the COVID 19 vaccination are specifically against the spike protein of the virus. It is unlikely to be related. Your celiac disease should be followed by your PCP.

All laboratory results need to be interpreted in the clinical context and the doctor who ordered the tests is usually in the best position to do that. Talk to the doctor who ordered the tests. Having said that, elevated IgG is an indication of chronic inflammation, currently or in the recent past. Your Celiac disease is a likely explanation. Talk to your doctor about repeating the test in a year.
