Whey vs hydrolysate.: Smaller protein products made from whey using enzymes and/or water which is sometimes referred to as "hydrolysate" versus the unchanged, whole protein of whey or milk protein which is called Casein. The difference is that one has been broken into smaller pieces and is usually safe for those who have an allergy to the milk protein Casein. Hydrolysate of Casein is usually more expensive.
