Unknown: Orthodontic treatment is tailored to each individual, and since no one is exactly the same, there are many ways to achieve desired results. Have your orthodontist explain their rationale, and if you are still not convinced, you can always get a second opinion from another local orthodontist after being examined.

My lord no: Non-surgical palatal expansion in adults is for the most part ineffective. The teeth widen, but not the bone, resulting in bone/gum loss. Removing molars in the hopes that wisdom teeth will erupt is at best chancy. I would very strongly recommend a second opinion, and make sure you see a fully qualified Orthodontic Specialist.

Best method?: There is no one "best method" for every individual. Each case is different and even different highly qualified dentists may disagree on what is "best" for the same patient. What's important is that you be under the care of a qualified Orthodontic specialist. There is also nothing wrong with getting 2 or even 3 opinions before you commence treatment. Find someone you trust and follow their advice.
