I think you have: largely answered the question yourself. Your diet is the problem! One meal, late at night (inactivity after eating) and probably sweetened or caffeinated beverages. Spread out your calories, make sure you get more fiber (veggies, fruits, healthy grains (cereal/bread/quinoa), nuts. You are presenting your intestine a challenge with your current pattern and too much has to go through too fast!
